Cooking with Vikki – Fit Recipes

Hello Fit Friday! Is that a new thing? I might just stick with it! Lately I’ve been on an extra healthy kick since I am on the Dukan Diet (lifestyle) and I’m surprisingly loving it. I have been finding super quick, simple and tasteful meals to make at home! Key words: quick and tasteful! I cannot follow recipes for the life of me and these have been the easiest ones that take less than 30 minutes and are SO good!  Check it out below! Ps. I wasn’t planning on doing a post on this so my pictures are from the few moments right before I ate… not the best quality!

Ingredients for all recipes:

Low Fat milk or Almond Milk, Eggs, Seasoning (I use Mrs. Dash, love the taste and it’s guilt free!), Buffalo Sauce (specifically one with 0 carbs and 0 fat), Chicken or some sort of protein, Deli ham and cheese (low fat), Carrot Spirals from Trader Joes, Grated Cauliflower Rice from Trader Joes, Low fat cream cheese or cottage cheese, Oat Bran (Not oatmeal)

Cauliflower Pizza (just the dough) topping up to you:


  • 1/2 Grated Cauliflower rice from Trader Joes
  • 2 spoons of Oat Bran


Preheat the oven to 400 degrees F.  Add PAM to your baking pan so the pizza doesn’t stick. Using a sheet with parchment paper would be ideal!

Cook the cauliflower rice, make sure all the water is gone and that it’s completely dry. In a bowl, combine the cauliflower with the oat bran, fat free cream cheese, Mrs. Dash, garlic powder and 2 eggs. Transfer to the center of the pan spread into a circle, resembling a pizza crust. Bake for 20 minutes. Add desired toppings and bake an additional 10 minutes. Yum!

Carrot Spirals “Pasta” w/ chicken


  • 1 package of Trader Joes Carrot Spirals
  • Lemon zest and lemon juice


Follow the cooking directions of the Trader Joes Carrot Spirals (literally just place it frozen in a cooking pan and place lid for 4-5 minutes)

Once fully cooked add seasonings, marinara sauce and chicken or protein of choice. Let it simmer for a few more minutes and add the lemon juice. Remove from heat and lit it sit for 1-2 minutes. Plate it and add lemon zest for a final touch!



  • 3 eggs
  • 2 egg whites
  • 1 spoon of fat free cream cheese
  • 2oz of chicken (optional)
  • 1/2 teaspoon of chopped red onion
  • Deli ham & cheese (fat free)
  • 2 tablespoons of oat bran


Preheat the oven to 350 degrees F.  Add PAM to your baking pan so the soufflé doesn’t stick.

In one large bowl mix WELL the eggs, egg white, oat bran, fat free cream cheese, seasonings. Add the chicken and pieces of the deli ham to the mix. Add the mix to the baking pan. Lastly add pieces of the fat free cheese on top. Bake for 35 minutes or until golden. Add a light salad to accompany the dish!
